Courgette Soup Recipe
Sopa de Calabacín
This courgette soup is not one that you are likely to find in a Spanish Restaurant but it is one that you would find in some Spanish homes. It is very simple but surprisingly tasty and the cheese triangles do add to it.
Courgette Soup Ingredients
Serves 4
- 4-6 courgettes
- 4 or 8 cheese triangles (Laughing Cow if possible) cut into 4 pieces
- 1 chicken stock cube (optional)
- approximately 1 litre/34 fl oz of boiling water
- salt and pepper
Cooking Method
Peel 2 of the courgettes and thinly slice or dice all 4 of them. Put the courgettes in a saucepan and pour in the boiling water to cover them. Add some salt or the chicken stock cube and bring to the boil. Lower the heat and simmer gently for 20 to 30 minutes.
Remove from the heat and either zap it with a hand held blender or use a food processor to blend it.
Put 4 or 8 bits of cheese triangle in to each soup bowl and ladle the hot soup on top of it.
Serve immediately with crusty bread.
NOTE: The courgette peel is left on to add colour to the soup but only leave it on half the courgettes at the most as it can be a bit bitter.
